Amazing Mediterranean Potato Salad with a creamy twist of turkey bacon, perfect for gatherings and picnics.

Ingredients

  • 2 pounds potatoes
  • 1 cup diced turkey bacon
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, then drain and let cool.
  2. In a skillet, cook the diced turkey bacon until crispy. Drain on paper towels.
  3. In a large bowl, mix together the mayonnaise, Greek yogurt, lemon juice, oregano, salt, and pepper.
  4. Dice the cooled potatoes and add them to the bowl along with the cherry tomatoes, cucumber, red onion, and turkey bacon.
  5. Toss gently to combine all ingredients.
  6. Refrigerate for at least 30 minutes before serving.

Notes

  • This salad can be made a day ahead for better flavor.
  • Feel free to add other vegetables like bell peppers or olives.
