  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 1/4 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg, apple cider, and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in dried cranberries.
  7. Drop spoonfuls of dough onto a lined baking sheet and flatten slightly.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, refrigerate the dough for an hour before baking.
  • These cookies pair well with a glass of warm cider.
