  • 2 pounds pork loin
  • 4 slices turkey bacon
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then set aside.
  3. Rub the pork loin with olive oil, salt, pepper, garlic powder, and onion powder.
  4. In the same skillet, sear the pork loin on all sides until browned.
  5. Add the apple cider, Dijon mustard, and apple cider vinegar to the skillet.
  6. Cover and bake in the oven for about 30 minutes or until the internal temperature reaches 145°F (63°C).
  7. Let rest for 10 minutes before slicing.
  8. Serve topped with crispy turkey bacon.
