Baked Italian Zucchini Parmesan

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 1 cup vegan mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis into rounds and sprinkle with salt.
  3. In a bowl, combine breadcrumbs, Italian seasoning, salt, and pepper.
  4. Dip each zucchini slice in olive oil, then coat with breadcrumb mixture.
  5. Arrange the zucchini on a baking sheet and bake for 20 minutes.
  6. Remove from the oven, layer marinara sauce and vegan mozzarella on top, and return to bake for an additional 10 minutes.
  7. Serve warm and enjoy!
