1 pound salmon fillets
1 cup Panko breadcrumbs
1/2 cup flour
2 eggs
1/4 cup mayonnaise
2 tablespoons sriracha sauce
1 tablespoon lemon juice
1 teaspoon garlic powder
salt to taste
pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, mix the mayonnaise, sriracha, lemon juice, garlic powder, salt, and pepper.
Cut the salmon into bite-sized pieces.
Dip each piece of salmon in flour, then egg, and finally coat with Panko breadcrumbs.
Place the coated salmon bites on a baking sheet lined with parchment paper.
Bake for 15-20 minutes or until golden brown and crispy.
Serve with the sauce mixture on the side.
Notes
For extra crunch, you can double coat the salmon bites.
These bites can also be deep-fried for an even crispier texture.
