1 pound salmon fillets
1 cup panko breadcrumbs
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha sauce
1 tablespoon soy sauce
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha sauce, soy sauce, garlic powder, salt, and pepper.
Cut the salmon into bite-sized pieces and coat them in the sauce mixture.
Roll the salmon pieces in panko breadcrumbs until fully coated.
Place the salmon bites on a baking sheet lined with parchment paper.
Bake for 12-15 minutes or until golden brown and cooked through.
Serve with additional sauce for dipping.
Notes
For extra crunch, broil the salmon bites for the last 2 minutes of cooking.
Feel free to adjust the level of spiciness by using more or less sriracha.
