Best Smothered Chicken and Rice

A delicious and comforting dish that features tender chicken smothered in creamy sauce served over a bed of fluffy rice.

  • 4 chicken thighs
  • 2 cups long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken thighs with salt, pepper, and paprika.
  3. Brown the chicken in the skillet for about 5-7 minutes on each side.
  4. Remove the chicken and set aside.
  5. In the same skillet, add onion and garlic and sauté until translucent.
  6. Add the rice and stir for a few minutes.
  7. Pour in chicken broth and bring to a boil.
  8. Add heavy cream and return the chicken to the skillet.
  9. Cover and simmer on low for 25-30 minutes or until rice is tender.

Notes

  • For a spicier dish, add cayenne pepper.
  • Feel free to add vegetables like bell peppers or peas.
