- 1 pie crust
- 2 cups pumpkin puree
- 1 cup heavy cream
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 3 large eggs
- 2 tablespoons bourbon
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon salt
- Preheat the oven to 425°F (220°C).
- Prepare the pie crust and place it in a pie dish.
- In a large bowl, whisk the pumpkin puree, heavy cream, brown sugar, granulated sugar, eggs, bourbon, vanilla extract, and spices until smooth.
- Pour the pumpkin mixture into the prepared pie crust.
- Bake in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and bake for an additional 45 minutes or until the filling is set.
- Remove from the oven and let cool.
- Before serving, sprinkle the top with granulated sugar and use a kitchen torch to caramelize the sugar until golden brown.
Notes
- For a stronger bourbon flavor, add more bourbon to the filling.
- Allow the pie to cool before brûléeing the top to prevent it from becoming too runny.
