  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chopped broccoli
  • 2 cups diced potatoes
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 4 slices turkey bacon, cooked and crumbled
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft.
  2. Add the chopped broccoli and diced potatoes, stirring to combine.
  3. Pour in the vegetable broth, bring to a boil, then reduce to a simmer. Cook until potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the cheese and milk until melted and creamy. Season with salt and pepper.
  6. Garnish with crumbled turkey bacon before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
