  • 3 cups diced potatoes

  • 4 cups vegetable broth

  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, cooking until softened.
  2. Add the diced potatoes and vegetable broth to the pot. Bring to a boil and then reduce to a simmer.
  3. After about 10 minutes, add the broccoli florets and continue cooking until the potatoes and broccoli are tender.
