  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 green onion, chopped
  • 1 cup diced tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then wrap in foil.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. In a skillet, cook the ground beef over medium heat until browned, then stir in the taco seasoning.
  5. Once the potatoes are done, remove them from the oven and let cool slightly.
  6. Cut the potatoes in half and scoop out some of the insides.
  7. Mix the scooped potato with the seasoned beef, and refill the potato skins.
  8. Top with cheddar cheese and return to the oven until the cheese is melted.
  9. Serve with sour cream, diced tomatoes, and green onions.
