Chickpea Feta Avocado Salad

A refreshing and nutritious salad combining chickpeas, feta, and avocado.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, avocado, feta, and red onion.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad is best served fresh but can be stored in an airtight container for up to 2 days.
