Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine chocolate cookie crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, blend cream cheese and granulated sugar until smooth.
  4. Add sour cream, eggs, and vanilla extract, mixing until incorporated.
  5. Fold in chocolate chips, then pour the filling over the crust.
  6. Bake for 55-60 minutes, until the center is set.
  7. Let cool to room temperature before refrigerating for at least 4 hours.
  8. For ganache, heat heavy cream, then pour over chocolate chips; stir until smooth.
