- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 4 packages (8 ounces each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/2 cup cocoa powder
- 1 cup strawberry puree
- Preheat oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter; press into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth; add 1 cup sugar and vanilla, mixing until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream until smooth.
- Divide batter in half; mix cocoa powder into one half.
- Pour half of the cocoa batter into the crust, followed by half of the strawberry puree, then the remaining cocoa batter, and top with remaining strawberry puree.
- Swirl with a knife to create a marbled effect.
- Bake for 55-60 minutes, until the center is set. Turn off the oven and let cheesecake cool with the door ajar.
- Chill in the refrigerator for at least 4 hours before serving.
