  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup cocoa powder
  • 1 cup strawberry puree

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese until smooth; add 1 cup sugar and vanilla, mixing until well combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream until smooth.
  5. Divide batter in half; mix cocoa powder into one half.
  6. Pour half of the cocoa batter into the crust, followed by half of the strawberry puree, then the remaining cocoa batter, and top with remaining strawberry puree.
  7. Swirl with a knife to create a marbled effect.
  8. Bake for 55-60 minutes, until the center is set. Turn off the oven and let cheesecake cool with the door ajar.
  9. Chill in the refrigerator for at least 4 hours before serving.
