Comforting Loaded Baked Potato Soup

A delicious and creamy loaded baked potato soup with a twist of turkey bacon for added flavor.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Stir in the heavy cream and cheese until melted and smooth.
  4. Mix in the turkey bacon, salt, and pepper, cooking for a few more minutes.
  5. Serve hot, garnished with green onions.

Notes

  • For a lighter version, use low-fat cream and reduce the cheese.
  • Can add additional toppings like sour cream or more cheese.
