- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices turkey bacon, chopped
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 medium potatoes, diced
- In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
- In the same pot, brown the beef chunks in the bacon fat.
- Add onions, carrots, and garlic, cooking until soft.
- Stir in wine, beef broth, and tomato paste. Add thyme and bay leaf.
- Return the bacon to the pot and bring to a simmer.
- Cover and cook on low heat for 2 hours.
- Add potatoes and continue to cook for another 30 minutes.
- Remove bay leaf before serving.

- Garnish with fresh parsley if desired.
