Copycat Anthony Bourdain's Beef Bourguignon

A delicious and hearty copycat recipe for Anthony Bourdain’s Beef Bourguignon with a unique turkey bacon twist.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 slices turkey bacon, chopped
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 medium potatoes, diced

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same pot, brown the beef chunks in the bacon fat.
  3. Add onions, carrots, and garlic, cooking until soft.
  4. Stir in wine, beef broth, and tomato paste. Add thyme and bay leaf.
  5. Return the bacon to the pot and bring to a simmer.
  6. Cover and cook on low heat for 2 hours.
  7. Add potatoes and continue to cook for another 30 minutes.
  8. Remove bay leaf before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • Garnish with fresh parsley if desired.
