- 8 slices turkey bacon
- 4 cups chicken broth
- 1 cup carrots, shredded
- 4 cups cabbage, shredded
- 2 green onions, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 package pre-cooked rice noodles
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
- Add broth, shredded carrots, and cabbage to the pot, and bring to a simmer.
- Stir in green onions, soy sauce, sesame oil, garlic, and ginger.
- Simmer for 10 minutes, then thicken the soup with the cornstarch mixture.
- Finally, add the rice noodles and the chopped turkey bacon. Let it heat through, then serve.
