Cozy One-Pot Egg Roll Soup

A warm and comforting soup that combines the flavors of egg rolls in a one-pot dish featuring turkey bacon.

  • 8 slices turkey bacon
  • 4 cups chicken broth
  • 1 cup carrots, shredded
  • 4 cups cabbage, shredded
  • 2 green onions, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 package pre-cooked rice noodles

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add broth, shredded carrots, and cabbage to the pot, and bring to a simmer.
  3. Stir in green onions, soy sauce, sesame oil, garlic, and ginger.
  4. Simmer for 10 minutes, then thicken the soup with the cornstarch mixture.
  5. Finally, add the rice noodles and the chopped turkey bacon. Let it heat through, then serve.

Notes

  • For added flavor, garnish with additional green onions or sesame seeds.
  • This soup can be made ahead and reheated as needed.
