  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 cup chicken broth
  • 1 cup spinach, chopped
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, salt, and pepper. Form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20 minutes.
  4. In a saucepan, combine coconut milk, curry powder, and chicken broth. Simmer for 10 minutes.
  5. Add spinach and cooked meatballs to the sauce, simmer for another 5 minutes.
  6. Stir in lime juice and cilantro before serving.
