- 1 pound ground beef
- 1 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 cup chicken broth
- 1 cup spinach, chopped
- 1 tablespoon lime juice
- 2 tablespoons cilantro, chopped
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, salt, and pepper. Form into meatballs.
