4 slices turkey bacon
1 cup diced chicken ham
1 medium onion, chopped
2 cloves garlic, minced
3 cups chicken broth
2 cups diced potatoes
1 cup corn, frozen or fresh
1 cup heavy cream
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped
Instructions
In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
In the same pot, sauté onion and garlic until translucent.
Add chicken ham, potatoes, chicken broth, and corn. Bring to a boil.
Reduce heat and simmer until potatoes are tender.
Stir in heavy cream, paprika, salt, and pepper. Cook until heated through.
Serve hot, garnished with chopped parsley and crumbled turkey bacon.
Notes
For a vegetarian version, omit the bacon and ham and use vegetable broth.
Feel free to add other vegetables like carrots or bell peppers.
