Creamy Crockpot Chicken Wild Rice Soup

A rich and creamy soup perfect for cold days, made easily in a crockpot.

Ingredients

  • 1 pound chicken breast
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add wild rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and black pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  4. Once cooked, shred the chicken and return to the pot.
  5. Stir in the heavy cream and parsley before serving.

Notes

  • For a thicker soup, use less chicken broth.
  • This soup can be frozen for later use.
