Creamy Lasagna Soup

A delicious and comforting creamy lasagna soup that combines the flavors of traditional lasagna with the ease of soup.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy, then remove and set aside.
  2. Add ground turkey to the pot and cook until browned. Stir in onion and garlic, cooking until onion is softened.
  3. Add crushed tomatoes, chicken broth, and Italian seasoning to the pot. Bring to a simmer.
  4. Add broken lasagna noodles and cook until tender.
  5. Stir in ricotta, mozzarella, and Parmesan cheeses until melted and creamy.
  6. Mix in fresh spinach until wilted.
  7. Season with salt and pepper to taste. Crumble turkey bacon on top before serving.

Notes

  • This soup freezes well; store in airtight containers.
  • For a vegetarian version, omit turkey and use vegetable broth.
