  • 1/2 cup sour cream
  • 1/4 cup Dijon mustard
  • 1/4 cup mayonnaise
  • 4 slices turkey bacon, cooked and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together sour cream, Dijon mustard, mayonnaise, garlic powder, onion powder, salt, and pepper.
  3. Stir in the diced potatoes until well coated.
  4. Spread the potatoes evenly on a baking sheet.
