  • 4 slices turkey bacon
  • 1/4 cup Dijon mustard
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the baby potatoes with olive oil, garlic powder, salt, and black pepper.
  3. Spread the potatoes on a baking sheet and roast in the preheated oven for about 25 minutes.
  4. Meanwhile, cook the turkey bacon in a pan until crispy, then chop it into small pieces.
  5. In a separate bowl, mix the heavy cream and Dijon mustard until well combined.
  6. After 25 minutes, add the mustard-cream mixture and chopped turkey bacon to the potatoes, mixing gently.
  7. Return to the oven and roast for an additional 15 minutes or until golden and crispy.
  8. Garnish with chopped parsley before serving.

  • This dish can be made vegetarian by replacing turkey bacon with mushrooms or additional vegetables.
