Creamy Outback Potato Soup

Deliciously creamy potato soup with the rich flavors of turkey bacon and chicken ham, perfect for warming up on a chilly day.

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons fresh chives, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, sautéing until translucent.
  3. Add the diced potatoes and chicken ham, cooking for a few minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Blend the soup for a creamy texture, then stir in the heavy cream.
  6. Season with salt, black pepper, and paprika. Stir well.
  7. Top with crispy turkey bacon and fresh chives before serving.

Notes

  • For a vegetarian version, omit turkey bacon and chicken ham.
  • You can use any type of potatoes.
