  • 1 large egg

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

  • 2 tablespoons chopped fresh parsley
  • 1/4 cup olive oil

Instructions

  1. Grate the zucchini and place it in a clean kitchen towel, wringing out as much moisture as possible.
  2. In a bowl, combine the zucchini, flour, egg, salt, pepper, garlic powder, Parmesan cheese, and parsley.
  3. Heat olive oil in a large skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet and flatten them slightly.
  5. Cook for about 3-4 minutes on each side until golden brown.
  6. Remove from the skillet and drain on paper towels before serving.
