Crispy Baked Parmesan Zucchini

A delicious and healthy twist on a classic snack, these crispy baked Parmesan zucchinis are guilt-free and easy to prepare.

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchinis into 1/4-inch thick rounds.
  3. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini slice in the egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchinis on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. Serve warm as a snack or side dish.

Notes

  • For extra crispiness, broil the zucchinis for the last 2-3 minutes of baking.
