Crispy Smashed Potato Salad

A delightful combination of crispy smashed potatoes, savory turkey bacon, and chicken ham, tossed together for a satisfying salad.

  • 2 pounds small potatoes
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped green onions
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes until tender, about 15-20 minutes.
  2. Preheat the oven to 425°F (220°C).
  3. On a baking sheet, place the boiled potatoes and smash them gently with a fork.
  4. Crisp the turkey bacon in a skillet, then crumble it over the smashed potatoes.
  5. In a mixing bowl, combine mayonnaise, mustard, green onions, and lemon juice. Add salt and pepper.
  6. Spread the mixture over the smashed potatoes and top with diced chicken ham.
  7. Bake for 15-20 minutes or until everything is heated through and slightly crispy.
