  • 2 pounds russet potatoes
  • 8 slices turkey bacon
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a crock pot, combine diced potatoes, diced onion, chicken broth, garlic powder, and onion powder.
  2. Cook on low for 7-8 hours or high for 4-5 hours until potatoes are tender.
  3. Occasionally mash some of the potatoes to thicken the soup.
  4. Stir in heavy cream and cheese until melted and creamy.
  5. Cook for an additional 30 minutes on low.
  6. Top with crispy turkey bacon before serving.
