Dark Chocolate Espresso Cake

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. Melt the dark chocolate and butter together in a saucepan over low heat, stirring until smooth.
  3. In a mixing bowl, whisk together the sugar and eggs until light and fluffy.
  4. Add the melted chocolate mixture and vanilla to the egg mixture, and stir to combine.
  5. Fold in the flour, cocoa powder, baking powder, salt, and espresso powder until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
