Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill muffin liners about 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the pan for 10 minutes before transferring to a wire rack.
