Dill Potato Salad

  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 cup chopped fresh dill
  • 1/4 cup diced red onion
  • 1 tablespoon apple cider vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the baby potatoes in a large pot until fork-tender, about 15 minutes. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, mix together mayonnaise, Dijon mustard, chopped dill, diced onion, apple cider vinegar, salt, and pepper.
  4. Add the cooled potatoes and turkey bacon to the dressing mixture. Stir until well combined.
