Easy Baked Zucchini Cheese Casserole

  • 4 medium zucchini, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine sliced zucchini, cheddar cheese, turkey bacon, breadcrumbs, beaten eggs, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Pour the mixture into a greased baking dish.
  4. Bake for 30-35 minutes or until the top is golden brown.
  5. Let it cool for a few minutes before serving.

Notes

  • For a vegetarian option, omit the turkey bacon and add extra cheese.
  • You can substitute zucchini with yellow squash if desired.
