Easy Ground Beef Zucchini Boats

Delicious zucchini boats filled with flavorful ground beef and crispy turkey bacon.

Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet, cook the ground beef and turkey bacon until browned.
  4. Add diced tomatoes, garlic powder, onion powder, salt, and pepper to the skillet and cook for a few minutes.
  5. Fill the zucchini halves with the beef mixture and top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes or until zucchinis are tender.

Notes

  • For a vegetarian option, substitute ground beef with lentils or mushrooms.
