  • 2 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 bell pepper, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  2. Add turkey bacon and cook until crispy.
  3. Stir in lentils, cumin, and paprika.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for about 20-25 minutes until lentils are tender.
  6. Add diced bell pepper and season with salt and pepper. Cook for another 5 minutes.
