  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and cube the sweet potatoes.
  3. In a large skillet, brown the sausage over medium heat.
  4. Add the onion and garlic; sauté until softened.
  5. Stir in the sweet potatoes, paprika, salt, pepper, olive oil, and thyme.
