  • 1 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 3 large eggs
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the mashed sweet potatoes, almond flour, honey, coconut oil, and eggs.
  3. Add in the ground ginger, cinnamon, baking soda, and salt. Mix until smooth.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 30-35 minutes or until a toothpick comes out clean.
