French Onion Chicken Orzo Casserole

  • 2 cups cooked chicken, shredded
  • 4 slices turkey bacon, chopped
  • 1 large onion, thinly sliced
  • 3 cups chicken broth
  • 1 cup Swiss cheese, shredded
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, sauté the onions until caramelized.
  4. In a large pot, combine the cooked chicken, orzo, chicken broth, thyme, garlic powder, salt, and pepper. Stir in the caramelized onions and turkey bacon.
  5. Transfer the mixture to a baking dish and top with Swiss cheese.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
