2 cups cooked rice
1 pound chicken breast, diced
4 slices turkey bacon, chopped
1 can (10.5 oz) French onion soup
1 cup shredded cheese
1/2 cup sour cream
1/4 cup green onions, chopped
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine cooked rice, diced chicken, chopped turkey bacon, French onion soup, sour cream, garlic powder, and half of the cheese. Season with salt and pepper.
Transfer the mixture to a greased casserole dish and spread evenly.
Top with the remaining cheese and chopped green onions.
Bake for 25-30 minutes or until the cheese is bubbly and golden.
Let it cool for a few minutes before serving.
Notes
This casserole can be customized with your favorite vegetables.
To make it ahead, prepare the dish and store it covered in the fridge for up to 24 hours before baking.
