French Onion Soup Mac

  • 2 cups elbow macaroni
  • 4 cups beef broth
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon thyme
  • 1 cup Gruyère cheese, grated
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil and butter over medium heat. Add onions and sauté until caramelized, about 15-20 minutes.
  3. Add beef broth and thyme to the pot. Simmer for 10 minutes.
  4. Stir in the cooked macaroni, Gruyère, mozzarella, and parmesan. Mix well.
  5. Season with salt and pepper. Cook until cheese is melted and everything is heated through.
