Garlicky Mushroom Quinoa

Instructions

  1. Rinse quinoa under cold water.
  2. In a saucepan, bring vegetable broth to a boil.
  3. Add quinoa, reduce heat, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add minced garlic and sliced mushrooms; sauté until mushrooms are tender.
  6. Combine cooked quinoa with the mushroom mixture.
  7. Season with salt and black pepper, then stir in fresh parsley.
  8. Serve warm.
