  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the pumpkin puree, melted coconut oil, brown sugar, and maple syrup.
  3. Add in the gluten free oats, almond flour, baking soda, cinnamon, and nutmeg. Mix until well combined.
  4. Drop spoonfuls of the dough onto the prepared baking sheet.
  5. Bake for 12-15 minutes until the edges are golden brown.
  6. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
