- 2 large sweet potatoes
- 4 slices turkey bacon
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons gochujang
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup coconut milk
- Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, add the onion and garlic, cooking until softened.
- Add the diced sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
- Stir in gochujang, salt, and pepper, blending well.
- Use an immersion blender to puree until smooth. Stir in coconut milk, heat through.

Notes
