Gochujang Sweet Potato Soup

Ingredients

  • 2 large sweet potatoes
  • 4 slices turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons gochujang
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup coconut milk

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Add the diced sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  4. Stir in gochujang, salt, and pepper, blending well.
  5. Use an immersion blender to puree until smooth. Stir in coconut milk, heat through.
  6. Serve with crumbled turkey bacon on top.

Notes

  • This soup can be adjusted for spice level by adding more or less gochujang.
  • Feel free to add additional vegetables for a heartier soup.
