  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup cooked chicken breast, diced
  • 1 cup milk
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add broccoli and stir for a few minutes before adding the vegetable broth.
  3. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  4. Blend the soup until smooth, then return it to the pot.
  5. Add milk, shredded cheddar, cooked chicken, salt, and black pepper, stirring until cheese melts.
  6. Mix cornstarch with a little water and add to the soup to thicken.
  7. Serve hot and enjoy!

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • For an extra kick, add some crushed red pepper flakes.
