  • 1 cup cottage cheese
  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine cottage cheese, shredded chicken, enchilada sauce, black beans, and corn.
  3. Transfer the mixture into a baking dish.
  4. Top with shredded cheese.
  5. Bake for 20-25 minutes until the cheese is bubbly and golden.
  6. Once baked, remove from the oven and let it cool for a few minutes.
  7. Garnish with diced avocado and sliced green onions before serving.
