  • 2 cups water
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced butternut squash
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/4 cup chopped parsley

Instructions

  1. In a saucepan, bring water to a boil, add pearl couscous, and cook for about 10 minutes until tender.
  2. Drain and let it cool.
  3. In a small bowl, whisk together honey, olive oil, salt, and black pepper.
  4. In a large bowl, combine cooled couscous, butternut squash, cranberries, pecans, and parsley.
