Honey Feta Sweet Potato Rounds

A delicious and healthy appetizer featuring roasted sweet potatoes topped with honey, feta cheese, turkey bacon, and spinach.

Ingredients

  • 2 large sweet potatoes
  • 1/2 cup feta cheese, crumbled
  • 4 slices turkey bacon
  • 2 cups fresh spinach, chopped
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4 inch rounds and arrange on a baking sheet.
  3. Drizzle olive oil and sprinkle salt and pepper over the sweet potatoes.
  4. Bake for 25 minutes, flipping halfway through, until tender.
  5. While the sweet potatoes bake, cook the turkey bacon in a skillet until crispy, then crumble it.
  6. In a small bowl, mix honey with chopped spinach.
  7. Once the sweet potatoes are done, top each round with honey spinach mixture, crumbled feta, and turkey bacon.
  8. Return to the oven for an additional 5 minutes to warm everything through.
  9. Serve warm and enjoy!
