Iced oatmeal cookies

Deliciously soft iced oatmeal cookies perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, combine the oats, flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Drop by rounded tablespoons onto the prepared baking sheet.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. To make the icing, whisk together the powdered sugar, milk, and vanilla until smooth and drizzle over the cooled cookies.

Notes

  • For a twist, add raisins or chocolate chips to the cookie dough.
  • Adjust the icing consistency by adding more or less milk.
