- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups powdered sugar
- 3 tablespoons milk
- 1 teaspoon vanilla extract (for icing)
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, combine the oats, flour, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Drop by rounded tablespoons onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- To make the icing, whisk together the powdered sugar, milk, and vanilla until smooth and drizzle over the cooled cookies.
Notes
- For a twist, add raisins or chocolate chips to the cookie dough.
- Adjust the icing consistency by adding more or less milk.
