  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Turn on the Instant Pot and select the sauté function. Add beef and brown on all sides.
  2. Add onions and garlic; sauté until translucent.
  3. Stir in tomato paste, thyme, salt, and pepper.
  4. Add potatoes and carrots to the pot.
  5. Pour in the beef broth and stir well.
  6. Close the lid, set to sealing, and cook on high pressure for 35 minutes.
  7. Once cooking is complete, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
  8. Serve hot, garnished with parsley if desired.

Notes

  • For a thicker stew, you can thicken the broth with a cornstarch slurry.
