Instant Pot Broccoli Cheddar Soup

A creamy and cheesy broccoli cheddar soup that is quick and easy to prepare in an Instant Pot.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups broccoli florets
  • 3 cups vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Turn on the Instant Pot and select the sauté function. Add olive oil.
  2. Once hot, add chopped onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add the broccoli florets and vegetable broth, then seal the lid.
  5. Cook on high pressure for 8 minutes.
  6. Quick release the pressure and stir in the cheddar cheese until melted.
  7. Mix in heavy cream and season with salt and black pepper.
