Jalapeno Popper Roasted Potato Salad

A delicious twist on potato salad featuring jalapenos and turkey bacon.

  • 2 pounds baby potatoes
  • 1 cup chopped turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapenos
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Boil the baby potatoes until tender, then drain and cool.
  2. Cut the cooled potatoes in half and place them in a large bowl.
  3. Add chopped turkey bacon, shredded cheese, and diced jalapenos to the potatoes.
  4. In a separate bowl, mix together sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
  5. Pour the dressing over the potato mixture and mix gently until well combined.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier salad, include more jalapenos or use spicy jalapeno cheese.
